Vegan Burger

 

When most people think vegan or vegetarian or just simply healthy diets, are strict, ultra-healthy eating, no burgers or cookies. In reality, for a lot of us, this is not at all the case… Do you want a really delicious burger and not feel guilty about it? This Easy Vegan Bean - Carrot Burger will satisfy your taste buds, leave you full and happy. And most importantly it’s HEALTHY, packed with micronutrients and fibre. You can add any of your favourite veggies like avocado, tomatoes, mushrooms, cucumbers, onions. etc. Add some vegan cheese, tahini paste or some vegan mayo. I used whole grain bread but it’s optional, I ate this burger wrapped in lettuce and trust me it tastes great! To make 4 burger patties you will need: 


300g carrots
1 can kidney beans ( you can use any type of beans you like)
50g oat flour
20g ground flaxseeds
2 garlic cloves
2 small sprigs of dill
2 small sprigs of dill
1tsp smoked paprika powder
1tsp salt
Pinch of pepper

1. Preheat the oven to 180℃ and line a pan with parchment paper.
2. Drain the beans, but leave a bit of liquid from the can, this will make burger texture even better – not too dry and not too wet. Mash them with a fork or potato masher.
3. Grate the carrots on the thinner side of grater and along with carrots grate the garlic. Add to the beans.
4. Finely chop the parsley and dill. Add to the bowl along with oat flour, ground flaxseeds, paprika powder, salt and pepper.
5. Mix all ingredients together using your hands or spoon. 
6. Divide into 4 and make the burger shape. This is how I do - first I make a ball and then I flatten on a baking sheet and creating shape of burger patty. 
7. Bake at 180℃ for 40 minutes.

Note: If you want to make 8, just double the ingredients
