Healthy Strawberry Cheesecake

This strawberry cheesecake is super creamy and is loaded with extra flavor from strawberries. This cake can be made Vegan and non-Vegan simply swapping agar agar powder to eggs. And trust me whether you made vegan or non vegan version, they both taste amazing! There is some recipe changes for non-Vegan, so make sure you follow all the steps.

For the recipe you will need:

CRUST:
2 cups almond flour (you can use ground almonds)
3 tbs coconut oil
2 tbs maple syrup (you can use any syrup or if you are not vegan use honey) 
1 tsp vanilla extract
¼ tsp salt 
FILLING:
1 can full-fat coconut milk 
300 g of white chocolate
300 g fresh strawberries
1 sachet agar agar powder ( instead you can use 2 eggs if you are not vegan, see the recipe changes below) 
1 tsp vanilla extract 
¼ tsp salt 
INSTRUCTIONS
1. Preheat oven to 180℃ or 350 degrees Fahrenheit 
2. Mix all crust ingredients in a bowl, until well mixed and sticky. Use your fingers to press the dough into the bottom and up the sides of a 22-23cm tart pan. Use a fork to puncture the bottom in three spots. Bake the crust for 10-12 minutes. Remove and cool on a wire rack.
3. To make the filling, heat the coconut milk and agar agar powder in a pot and bring to a simmer. Once simmering, turn off heat and add the chocolate, vanilla extract and salt stirring until smooth. Let it cool for 8 minutes. 
4. Meanwhile in a blender blend strawberries and add to the mixture and mix together.
5. Pour the ganache filling into the crust and let it sit in the fridge overnight.
6. Decorate with fresh strawberries and mint leaves. 
NOTE: If you are not vegan, instead of agar agar powder add 2 eggs 
1. Do the same steps for the filling - heat the coconut milk in a pot and bring to a simmer. Once simmering, turn off heat and add the chocolate, stirring until smooth. 
2.In a small bowl whisk the eggs with the vanilla extract and salt. Add the cooled chocolate and stir well. 
3. Meanwhile in a blender blend strawberries and add to the mixture and stir again.
4. Pour the ganache filling into the crust and cook for 20-25min. When it's done, the center will still be wobbly, but the edges should look firm. The center will continue to firm as it cools. Remove the tart from the oven and cool in the tart pan on a wire rack.
